If there's one dessert that reminds me of summer, it's s'mores! There's no better way to sit around the campfire (or the bbq) than roasting marshmallows and sandwiching them between some dark chocolate and homemade graham crackers.
But, for when you don't have an open flame available, these s'mores blondies are the next best thing. They consist of a graham cracker flavored cookie dough that's filled with chunks of dark chocolate and marshmallow.

These gluten free s'mores blondies require just 11 ingredients.
Rather than contain actual graham cracker pieces, these s'mores blondies have a graham cracker flavored cookie dough. Which is achieved, all thanks to the addition of cinnamon, nutmeg and molasses.

- cassava flour - While I have not tested this recipe with anything other than cassava flour, subbing with a gluten free blend or all purpose flour should work. For best results, measure the flour by weight, especially if making a substitution.
- baking soda - for the rise
- cinnamon - added for flavor
- nutmeg - added for flavor
- salt - enhances the flavors
- unsweetened almond butter - If you're in need of a nut free s'more blondie recipe, then feel free to swap the almond butter for sunflower seed butter, tahini or tigernut butter. This swap will slightly change the taste, but shouldn't have any effect on the texture.
- maple syrup - to sweeten the blondies
- molasses - added for flavor. You can swap the molasses for more maple syrup if you prefer.
- vanilla extract - for flavor
- dark chocolate (bar or chips) - I used Hu salty dark chocolate (it's paleo and vegan), but any variety will work for this recipe. You can also use chocolate chips if you prefer. If you're looking for a lower sugar alternative, try using Pascha 100% dark chocolate chips (they're a favorite of mine).
- marshmallows - Finding a healthy marshmallow brand can be tricky. I used Max Mallow classic vanilla, but homemade marshmallows are another great option.

How to Make S'mores Blondies
To make these vegan s'mores blondies, you'll need a large mixing bowl, spatula or wooden spoon for mixing and a parchment-lined loaf pan.
These blondies are easy to make, the dough is no-chill and bakes in just 14 minutes. Here's what you need to do:
- Preheat your oven to 350 degrees F. Line an 8x4 inch loaf pan with parchment paper.
- In a large mixing bowl, combine the cassava flour, baking soda, cinnamon, nutmeg and salt.
- Mix in the almond butter, maple syrup, molasses and vanilla using a spatula. Mix until the dough is well combined.
- Chop the dark chocolate and marshmallows into small pieces (if necessary) and fold them into the dough.
- Press the dough into the lined loaf pan. Optional: top with additional marshmallows and chocolate.


- Place the pan in the oven and bake at 350 degrees for 14 minutes. You want the blondies to be slightly underbaked when you take them out, as they will continue to bake as they cool in the pan.
- Remove the blondies from the oven and cool in the pan to room temperature. You can enjoy them warm or chilled, but they tend to cut best after chilling an hour in the fridge.

Storage
Keep these vegan s'mores blondies in an air-tight container in the fridge for up to one week. For longer storage, cut and place in a baggie in the freezer and enjoy within one month.
