A naturally sweetened snack, high in healthy fats, antioxidants, vitamins and minerals. Paleo and Vegan friendly.

Energy Bites
- 1/2 cup raw almonds
- 1/2 cup raw pumpkin seeds
- 1/4 cup unsweetened shredded coconut
- 1/4 cup hemp seeds
- 5 Brazil nuts
- 5 Medjool dates, pitted
- 3 Tbsp goji berries
- 1/4 tsp pink Himalayan salt
Topping (optional)
- 1 oz dark chocolate
- 1/2 tsp coconut oil
- 1/2 Tbsp hemp seeds
Instructions
- Place all ingredients for energy bites (not the topping) in food processor and blend until mixture starts to clump and can be formed into balls*
- Form dough into bite-sized balls, about 1 tablespoon in size.
- Optional: melt dark chocolate and coconut oil in small sauce pan oover low heat, stirring frequently. Drizzle melted chocolate over energy bites then sprinkle with hemp seeds.
- Place in fridge or freezer to set.
- Best stored in fridge or freezer.
Notes
*It may take a while for your dough to become sticky enough to form into balls. Have patience, stopping to scrape the sides of your food processor every minute or so. If needed, add 1-2 teaspoons of water.
