Description

A naturally sweetened snack, high in healthy fats, antioxidants, vitamins and minerals.  Paleo and Vegan friendly.


Ingredients

Energy Bites

Topping (optional)

  • 1 oz dark chocolate
  • 1/2 tsp coconut oil
  • 1/2 Tbsp hemp seeds

Instructions

  1. Place all ingredients for energy bites (not the topping) in food processor and blend until mixture starts to clump and can be formed into balls*
  2. Form dough into bite-sized balls, about 1 tablespoon in size.
  3. Optional: melt dark chocolate and coconut oil in small sauce pan oover low heat, stirring frequently.  Drizzle melted chocolate over energy bites then sprinkle with hemp seeds.
  4. Place in fridge or freezer to set.
  5. Best stored in fridge or freezer.

Notes

*It may take a while for your dough to become sticky enough to form into balls.  Have patience, stopping to scrape the sides of your food processor every minute or so.  If needed, add 1-2 teaspoons of water.
