This turmeric chicken recipe is great for an easy weeknight dinner. It's made with boneless chicken thighs (although chicken breast works too), cooked on the stove top and finished with a delicious turmeric and lemon sauce.
- Cut the chicken thighs into bite-sized pieces using a knife or kitchen shears.
- Heat a frying pan on medium heat and add 1/2 Tbsp olive oil. Add the cut up thighs and cook on medium heat, stirring the chicken every so often.
- While the chicken is cooking, make the sauce. Combine all sauce ingredients in a small dish and whisk until well mixed.
- When the chicken is done cooking (this takes about 15-20 minutes), pour the sauce over the chicken and reduce the heat to medium-low. Continuously stir the chicken for about 1 minute, coating it in the turmeric sauce. The sauce will thicken and you'll be left with tender, flavorful chicken thighs.
*Or 2 large chicken breasts. If using chicken breasts, cook the chicken in 1 Tbsp olive oil instead of 1/2 Tbsp.
