Turmeric Chicken Recipe (Paleo, Whole30)

Description

This turmeric chicken recipe is great for an easy weeknight dinner. It's made with boneless chicken thighs (although chicken breast works too), cooked on the stove top and finished with a delicious turmeric and lemon sauce.

Chicken Thighs

  • 4 large boneless chicken thighs*
  • 1/2 Tbsp olive oil

Turmeric Sauce

  • 3 Tbsp coconut aminos
  • 1 tsp olive oil
  • 1 tsp lemon juice
  • 1 tsp turmeric
  • 1/2 tsp tapioca flour
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt

Instructions

  1. Cut the chicken thighs into bite-sized pieces using a knife or kitchen shears.
  2. Heat a frying pan on medium heat and add 1/2 Tbsp olive oil.   Add the cut up thighs and cook on medium heat, stirring the chicken every so often.
  3. While the chicken is cooking, make the sauce. Combine all sauce ingredients in a small dish and whisk until well mixed.
  4. When the chicken is done cooking (this takes about 15-20 minutes), pour the sauce over the chicken and reduce the heat to medium-low. Continuously stir the chicken for about 1 minute, coating it in the turmeric sauce. The sauce will thicken and you'll be left with tender, flavorful chicken thighs.

Notes

*Or 2 large chicken breasts.  If using chicken breasts, cook the chicken in 1 Tbsp olive oil instead of 1/2 Tbsp.
