I decided to participate in a Whole30 this January. Which you already know if you follow me on Instagram, as I've been regularly sharing my meals.
It was a decision based off of love for myself and the intent to help my gut with some sudden issue's I've been having. Not from a place of self hate and needing to get "back on track" or lose some holiday weight gain. No, this decision was made in hopes to get my body back to feeling good with the help of eliminating inflammatory foods and adding more nourishing meals, along with supplementation.
Anyway, I've been really enjoying the journey! It's forced me to get more creative in the kitchen with savory recipes - something my whole family has been enjoying.
This turmeric chicken recipe is one of the many meals I've been eating, as it's satisfying, flavorful and easy to make. Oh, and of course whole30 approved 😉

Ingredients
Here's what you need to make these turmeric chicken thighs:
- 4 boneless chicken thighs (or two large breasts)
- olive oil
- coconut aminos
- lemon juice
- turmeric
- tapioca flour
- garlic powder
- onion powder
- salt
If you decide to make this recipe is chicken breasts instead of thighs, then you will need a little more olive oil so that the chicken doesn't dry out.
Tapioca flour is necessary to thicken the sauce. For an alternative, use arrowroot starch, which is both paleo and whole30.
How to Make Turmeric Chicken
This turmeric chicken is cooked on the stove top and super easy to make. Here's what you need to do:
First, cut the chicken thighs into bite-sized pieces using a knife or kitchen shears.
Next, heat a frying pan on medium heat and add some olive oil. Then, add the cut up thighs and cook on medium heat, stirring the chicken every so often.
While the chicken is cooking, make the sauce. Combine all sauce ingredients in a small dish and whisk until well mixed.
When the chicken is done cooking (this takes about 15-20 minutes), pour the sauce over the chicken and reduce the heat to medium-low. Continuously stir the chicken for about 1 minute, coating it in the turmeric sauce. The sauce will thicken and you'll be left with tender, flavorful chicken thighs.

This whole30 turmeric chicken pairs well with many different sides. For instance, I added cauliflower rice to keep the meal whole30 approved. Some other great options include:

*Or 2 large chicken breasts. If using chicken breasts, cook the chicken in 1 Tbsp olive oil instead of ½ Tbsp.
