Description

Healthy Vegan Baked Tater Tots made with 5 simple ingredients.  Paleo, gluten free and Whole30 approved.


Ingredients

Scale
  • 5 organic Yukon Gold Potatoes (450g)*
  • 1/4 cup coconut flour
  • 1 Tbsp olive oil
  • 1 Tbsp fresh thyme
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 375 degrees F.

  2. Wash potatoes and cut into cubes.  Steam potatoes in a steamer pot until tender.

  3. Place steamed potatoes in a large mixing bowl.

  4. Mash the potatoes.  This can be done with a fork, a potato masher or an immersion blender.  For reference, I used an immersion blender.

  5. Add in remaining ingredients.  (For fresh thyme, remove the stems and just use the leaves.)  Mix well.

  6. Use a cookie scoop to scoop the mixture onto a baking sheet.  If you don't have a cookie scoop, simply use a spoon, spatula or even your hands to make the tots.

  7. Place the tots in the middle rack of the oven and bake at 375 degrees for 30 minutes.  Optional: broil a few minutes to brown the tops.

  8. Store in fridge up to one week.

*450 grams potatoes or about 3 cups chopped
