I remember loving tater tots as a kids. They were like hashbrowns, but at a whole new level. These Vegan Baked Tater Tots are slightly different than the ones I had as a kid. As, these tots are baked, not fried and made with healthy, fresh ingredients. This is my spin on traditional tater tots!

Ingredients in Vegan Baked Tater Tots
This baked tater tots recipe contains just 5 ingredients: Yukon gold potatoes, coconut flour, olive oil, fresh thyme and salt.
For substitutions, any variety of potato will work. Also, avocado oil is a great Paleo replacement for the olive oil. If you don't have fresh thyme on hand, then dried thyme can be used instead. Coconut flour is a must for this recipe, as it plays a large role in the texture of the tots. I do not recommend substituting the coconut flour with any other ingredient.
How to Make Vegan Baked Tater Tots
First, preheat the oven to 375 degrees F. Gather all necessary ingredients.
Next, wash and cut the potatoes into cubes. Then, steam the potatoes until they are tender and easy to mash. I suggest using a stainless steel steamer pot to steam them. Place the steamed potatoes in a large mixing bowl.
Next, mash the potatoes. This can be done with a fork, a potato masher or an immersion blender. For reference, I used an immersion blender.
After mashing the potatoes, add all remaining ingredients. (For fresh thyme, remove the stems and just use the leaves.) Mix well.
Then, use a cookie scoop to scoop the mixture onto a baking sheet. This will make one dozen potato tots. If you don't have a cookie scoop, simply use a spoon, spatula or even your hands to make the tots.
Place the tots in the middle rack of the oven and bake at 375 degrees for 30 minutes. Optional: broil a few minutes to brown the tops.
Cool slightly, then remove from the pan and serve. Or, make these Vegan Potato Tots ahead of time and reheat in the oven when you're ready to eat. They actually keep really well in the fridge!

Can Any Type of Potato Be Used?
Yes, any potato variety will work for this recipe. I chose Yukon Gold potatoes, but red potatoes, russet and even sweet potatoes would work well.
What if I Don't Have Fresh Thyme?
Any fresh or dried herb will work in these Yukon Gold tater tots. Some great alternatives include: rosemary, basil and oregano.
Can These Be Made Ahead of Time?
Yes! Either, make the batter ahead of time and bake when ready to eat, or bake the tots and then re-heat. They store really well in the fridge for 4-5 days. Simply, reheat them in the oven at a low temperature before eating. (They taste good cold too!)
What's the Best Way to Store Tater Tots?
These tater tots need to be stored in the fridge or freezer. However, I recommend fridge storage, as they keep best that way. They will last well for about 5 days.
