Description

This healthy mug cake is made in the microwave, Paleo approved, Vegan friendly and doesn't contain any added sugar.  It's perfect for a satisfying breakfast or healthy dessert.


Ingredients

Scale
  • 1/4 cup mashed banana (65g)
  • 1 Tbsp tahini
  • 1/2 tsp vanilla extract
  • 1/4 cup water
  • 2 Tbsp cassava flour (16g)
  • 2 Tbsp coconut flour (16g)
  • 2 Tbsp ground flax (12g)
  • 1/4 tsp baking soda
  • pinch of salt

Instructions

  1. In a large mug or small microwaveable bowl, mash banana.
  2. Mix in wet ingredients: tahini, vanilla extract, water.
  3. Mix in dry ingredients: cassava flour, coconut flour, ground flax, baking soda, salt.
  4. Place dish in the microwave and microwave on high for 2 minutes.
  5. Cool slightly, top with your favorite toppings, then eat.
