This simple cake is cooked in the microwave, Paleo, Vegan, nut free, egg free, gluten free and doesn't contain any added sugar. It's an all around great recipe for any occasion.

So, what's so great about this flourless banana mug cake recipe? Well, many things. Most importantly taste and texture.
This single serving banana cake has a slightly sweet banana and vanilla flavor with a dense, yet fluffy and moist texture. It's literally perfect!

Ingredients in Vegan Banana Mug Cake
So, now on to the most important part...what IS in this mug cake. My recipe uses the following ingredients:
- ripe banana
- cassava flour
- coconut flour
- ground flax
- baking soda
- salt
- tahini (or any nut/seed butter)
- vanilla extract
- water
- chocolate chips (optional)
This particular recipe requires the combination of cassava flour, coconut flour and ground flax to get the right texture. However, the tahini may be substituted with any nut or seed butter.
This paleo banana mug cake is only sweetened with banana. But, feel free to add a teaspoon or two of sugar/sweetener (like honey, maple syrup or coconut sugar).
How to Make a Banana Mug Cake
Microwave mug cakes are SO easy to make! Here's what you need to do:
First, mash the banana in a large mug or small microwaveable bowl. Next, mix in the wet ingredients (tahini, vanilla, water). Then mix in the dry ingredients (cassava, coconut, flax, baking soda, salt).
Lastly, place the dish in the microwave and microwave on high for 2 minutes.
Cool slightly, add your favorite toppings and eat!

My favorite mug cake toppings include the following:
- fresh, frozen or dried fruit
- nut or seed butter
- dairy free yogurt
- dairy free cream cheese
- chopped nuts or seeds
- dark chocolate chips
- dye free sprinkles
- bee pollen (not vegan)
- cinnamon
How to Store Mug Cakes
Leftovers are best stored in the fridge. Either cover the mug cake or place it in a sealed container. It will keep well for a couple of days. When you're ready to eat it, warm it in the microwave for just 10 seconds.

- ¼ cup mashed banana (65g)
- 1 Tbsp tahini
- ½ tsp vanilla extract
- ¼ cup water
- 2 Tbsp cassava flour (16g)
- 2 Tbsp coconut flour (16g)
- 2 Tbsp ground flax (12g)
- ¼ tsp baking soda
- pinch of salt
Instructions
- In a large mug or small microwaveable bowl, mash banana.
- Mix in wet ingredients: tahini, vanilla extract, water.
- Mix in dry ingredients: cassava flour, coconut flour, ground flax, baking soda, salt.
- Place dish in the microwave and microwave on high for 2 minutes.
- Cool slightly, top with your favorite toppings, then eat.

SO GOOD! very dense too! I subbed pistachio butter for tahini, did 3T cassava and 1T coconut flour, and also added 1T coconut sugar and a dash of cinnamon. it was delicious!!

Can I either take out the ground flax or substitute it? If so, would it be better to ground chia seeds before adding or just leave it as is?
