Description

Healthy paleo and vegan friendly waffles made with tigernut flour.

Instructions

  1. Plug in your waffle iron to preheat.
  2. Optional: preheat your oven to 250 degrees F to crisp up the waffles after cooking on the waffle iron.
  3. In a small mixing bowl, combine the dry waffle ingredients.  This includes the tigernut flour, tapioca starch, baking powder and salt.
  4. In a large mixing bowl, combine the wet waffle ingredients.  This includes the eggs, water, maple syrup, coconut oil and vanilla.
  5. Pour the dry mixture into the wet mixture and whisk until well combined.
  6. Let the batter sit for 5 minutes the thicken.
  7. Pour the batter onto your preheated waffle iron and cook until done.
  8. Place the cooked waffle on a wire cooling rack and heat in the oven for 10-15 minutes to crisp.
  9. Repeat until no more batter remains.

Notes

*If you want these waffles to be vegan (egg free), then swap the eggs with flax eggs.  1 flax egg = 1 Tablespoon of ground flax mixed with 3 Tablespoons of water.
