Coconut Flour Pancakes (Dairy Free, Nut Free)

Easy dairy free and nut free Coconut Flour Pancakes.  These low carb pancakes are perfect for a simple weekend breakfast.


  • 4 large eggs
  • 2 Tbsp maple syrup (or sweetener)
  • 1 tsp vanilla extract
  • 1/4 cup coconut flour, packed (36g)
  • 2 Tbsp tapioca flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/8 tsp salt
  • oil for cooking


  1. In a medium sized mixing bowl, combine eggs, maple syrup and vanilla.  Whisk.
  2. Add in remaining ingredients, whisk.
  3. Let batter sit for 5 minutes to set.  While you wait, preheat frying pan on medium-low heat.
  4. Grease pan with oil (I used coconut oil) and pour 1/4 cup batter on pan.  Cover and cook on medium-low heat until golden brown on the bottom.
  5. Flip pancake and cook about 1 min more, or until pancake is cooked through.
  6. Repeat steps 4-5 until no more batter remains.
