Description
These healthy holiday cookies are made with almond flour, dried cranberries and fresh oranges. Paleo, gluten free, dairy free and grain free.

- 1 cup blanched almond flour, lightly packed (115g)
- 2 Tbsp coconut flour (18g)
- 1/4 cup coconut sugar
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 cup non-hydrogenated shortening (room temp)
- 1 large egg
- 2 Tbsp freshly squeezed orange juice
- 2 tsp orange zest
- 1/3 cup dried cranberries
Instructions
- Preheat oven to 350 degrees F.
- Combine almond flour, coconut flour, coconut sugar, baking soda and salt in a medium-sized mixing bowl.
- Mix in shortening, egg, orange juice and orange zest. Mix until the shortening is dispersed throughout the batter.
- Fold dried cranberries into the batter.
- Use a medium-sized cookie scoop (about 2 tablespoons of batter) to scoop the cookies onto a baking sheet.
- Place cookies in the oven and bake at 350 degrees for 12 minutes.
- Remove cookies from the oven and rest on baking sheet for 5 minutes. Then, transfer to a cooling rack.
