    Superfood Chocolate Bark (Paleo)

    This superfood chocolate bark is made with dark chocolate and a variety of superfoods for a satisfying dessert. It's not only delicious, but highly nutritious and easy to make. This chocolate bark recipe is paleo friendly, gluten free, dairy free and easily made vegan.

    I love making my own chocolates.  From fig bars to chocolate honey caramels, homemade chocolate has so many possibilities!  

    This superfood chocolate bark is one of my all time favorites; something I've been making for years. It's filled with a host of healthy ingredients, creating a dessert that is not only high in nutrition, but also satisfying in texture and taste. 

    This recipe is high in antioxidants, vitamins and minerals. Which makes it great for satisfying your sweet tooth, but also upping your nutritional intake.

    I love storing this bark in my freezer, but it also makes for a great holiday gift. Make a batch and gift to your family or friends in glass mason jars or baggies.

    Ingredients

    Here's a list of what you need to make this dark chocolate superfood bark:

    • dark chocolate - choose anything from your favorite chocolate chips to your favorite chocolate bar
    • mushroom blend - I like Four Sigmatic's organic mushroom blend. It contains a blend of mushrooms like lion's mane and rhodiola and doesn't change the taste of the chocolate.
    • chopped Brazil nuts - feel free to omit for a nut free version
    • goji berries - add a bit of a chewy texture and provide a plethora of antioxidants, minerals and vitamins
    • pumpkin seeds - add crunch and are high in vitamin K and magnesium
    • hemp seeds - good source of vitamin E and iron
    • cacao nibs - provide extra crunch and antioxidants
    • bee pollen - high in B vitamins, omit for vegan

    How to Make Chocolate Bark with Superfoods

    This chocolate bark is super easy to put together. Here's what you need to do:

    1. Line a small baking sheet or large plate with parchment paper and set aside.
    2. Melt the dark chocolate. Once melted, mix in the mushroom blend.
    3. Pour the chocolate on the lined baking sheet and spread to a thin layer, about ¼ inch thick.

    1. Place the chocolate bark in the fridge or freezer to set.
    1. Once set, cut the bark to desired size.

    Storage

    This chocolate bark can be stored at room temperature, in the fridge or in the freezer. Place the bark in a small baggie or airtight container. Store at room temperature for up to one month, 6 months in the fridge, or a year in the freezer.

    Recipe Alterations

    • Make the bark nut free: omit the Brazil nuts.
    • Add protein: mix some collagen or protein powder into the melted dark chocolate. Some good protein powders include: beef protein isolate or hemp protein powder.
    • Swap the superfoods: use sunflower seeds instead of pumpkin seeds, swap the Brazil nuts for walnuts, use dried blueberries instead of goji berries...
    • Turn the bark into cups: instead of making bark, pour the chocolate into cups (paper lined muffin pan or a silicone muffin pan) for bite-sized treats.

    FAQ

    Is this superfood bark vegan?

    All ingredients are vegan except for the bee pollen. Omit the bee pollen for a vegan version.

    Can this recipe be made nut free?

    Yes, you can omit the Brazil nuts or swap them for another seed. Any of the toppings are optional.

    Ingredients

    Scale
    • 1 cup dark chocolate chips (about 5.6 oz)
    • 1 tsp organic mushroom blend
    • 5 Brazil nuts, chopped (omit for nut free)
    • 2 Tbsp goji berries
    • 1 ½ Tbsp pumpkin seeds
    • ½ Tbsp hemp seeds
    • ½ Tbsp cacao nibs
    • ½ tsp bee pollen (omit for vegan)


    Instructions

    1. Line a small baking sheet or large plate with parchment paper.
    2. Melt the dark chocolate.  You can do this in the microwave at 20 second intervals, stirring between.  Or on the stovetop, over low heat.
    3. Once the chocolate is melted, mix in the mushroom powder.
    4. Pour the chocolate on the lined baking sheet.  Spread out to about ¼ inches thick.
    5. Add the toppings*
    6. Place the bark in the fridge or freezer for 30 minutes to set.
    7. Cut bark to desired size.
    8. Store in a sealed container or baggie at room temperature, the fridge or freezer.

    Notes

    *Topping quantities are an estimate.  Feel free to add more or less of any item.
