Earlier this year, I made my first ever scone recipe! And now I just can't get enough.
I've been testing quite a few varieties...some vegan, some with fruit some with chocolate. But these paleo chocolate chip scones? Oh, they're something else!
These chocolate chip scones are made with almond flour, sweetened with maple syrup and have bits of chocolate in every bite. I love that they're mildly sweet with a moist interior, but crisp on the outside.

Ingredients

- almond flour - I recommend using blanched almond flour. If you need the recipe to be nut free, you could try swapping the almond flour for tigernut flour.
- tapioca starch - or arrowroot starch. Needed for texture purposes.
- coconut flour - needed to achieve the right batter texture.
- baking soda - for a slight spread in the scones.
- salt - enhances the flavors.
- palm shortening - or butter
- egg - to bind the ingredients
- maple syrup - for a little sweetness
- chocolate chips - since these are chocolate chip scones.
- water - to thin the batter

How to Make Chocolate Chip Scones From Scratch
Scones may look hard to make, but they're not! Here are the step-by-step instructions for how to make gluten free chocolate chip scones.
- First, preheat your oven to 375 degrees F. Line a baking sheet with parchment paper.

- Combine all dry scone ingredients.

- Mix in the shortening until the dough is in small clumps.

- In a separate bowl, combine the wet ingredients.

- Pour the wet ingredients into the dry and mix until just combined. Then fold in the chocolate chips.

- Roll the dough into a ball. Flatten on your lined baking sheet and cut into 8 equal pieces.

- Separate each triangular section of dough. Then place the scones in the oven and bake at 375 degrees F for 12 minutes.

Storage
These scones are best eaten just after being baked, but you can store them in the fridge to save for later. Place them in an airtight container and keep in the fridge for up to 5 days. For long term storage, place them in an airtight baggie and store in the freezer up to one month.

Ingredients
- 1 cup blanched almond flour (95g)
- ½ cup tapioca starch (60g)
- ¼ cup coconut flour (26g)
- ½ tsp baking soda
- ¼ tsp salt
- ⅓ cup palm shortening (or butter)
- 1 large egg
- 3 Tbsp maple syrup
- 2 Tbsp water
- 2-3 Tbsp mini chocolate chips
Instructions
- Preheat your oven to 375 degrees F. Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the almond flour, tapioca starch, coconut flour, baking soda and salt.
- Add in shortening and mix until dough has a course, crumbly texture*
- In a separate bowl, whisk together egg, maple syrup and water.
- Pour the wet mixture into the dry mixture and combine. Do not over-mix!
- Fold in the chocolate chips.
- Roll the dough into a ball and then flatten on your lined baking sheet. Cut into 8 even pieces, then separate each piece so that they aren't touching.
- Place scones in the oven and bake at 375 degrees F for 12 minutes.
- Remove from oven, cool on the pan a few minutes, then transfer to wire cooling rack and cool to room temperature.
Notes
*I recommend mixing first with a fork, then using your hands to work the dough. The mixture will be course and crumbly, not fully combined. (See blog post photos for reference.)

Wondering when to add the water that’s listed in ingredients. I just made these and I’m not sure they’ll turn out, I added water and it seemed to change the dough significantly. Thanks!

What is shortening? I’ve never used it or heard of it

It's basically a butter replacement. I use Nutiva shortening, which is made from organic palm oil and coconut oil. Butter (or vegan butter) should work as a replacement for the shortening.
