    Protein Ice Cream Bars (Dairy Free)

    These protein ice cream bars have a thick, creamy ice cream filling that's coated in a dark chocolate shell. They're made with coconut cream, protein powder and sweetened with maple syrup. In addition, these healthy ice cream bars are dairy free, paleo, vegan and keto friendly.

    I never buy ice cream bars anymore, as making my own is so much more satisfying!

    I love experimenting with different textures and flavors and these chocolate protein ice cream bars are one of my new favorite combos. They have a thick, creamy filling that's almond like fudge and a hard chocolate shell.

    While you can purchase protein ice cream bars at the store (like Yasso and Enlightened ice cream bars), my version is healthier and tastes better. There aren't any fake sugars that irritate the gut, "natural" flavorings, vegetable oils or colorings. Just real, simple ingredients.

    In addition, this homemade protein ice cream bar recipe is free from common allergens. No gluten, dairy, egg, soy, corn or nuts!

    Ingredients

    Here's a list of what you need to make these protein ice cream bars. Some ingredients are optional, so feel free to omit.

    • coconut cream (or just the cream from a can of full fat coconut milk)
    • dark chocolate (for both the filling and the chocolate shell)
    • sunflower seed butter (or any nut/seed butter)
    • maple syrup (maple flavored sweetener for keto option)
    • vanilla extract (optional)
    • hemp protein powder (most other protein powders should work)
    • CBD oil (optional)
    • coconut oil (to thin the chocolate for the outer shell)

    I used hemp protein powder to make these high protein ice cream bars, however most protein powders should work as a replacement. My favorite hemp protein is from Evo Hemp. It's high quality, pesticide free, third party tested and has great flavor.

    In addition to the hemp protein, I also added Evo Hemp full strength CBD oil. While this ingredient is completely optional, I like the therapeutic effects of CBD oil. It's great for managing stress and anxiety, easing aches and pains and you can't taste it in these ice cream bars.

    How To Make Protein Ice Cream Bars

    These ice cream bars are easy to make! Here's what you need to do:

    1. Melt the coconut cream and dark chocolate in a small saucepan.
    2. Once melted, mix in the sunbutter, maple syrup, vanilla, hemp protein and CBD oil. Whisk until smooth.

    1. Pour the filling into silicone popsicle molds. Add popsicle sticks.

    1. Freeze the filling for at least 2 hours, or until firm.
    2. Melt the dark chocolate and coconut oil. Mix in CBD oil if desired.
    3. Remove the ice cream fillings from the popsicle mold and dip them into the melted chocolate.

    1. Lay the dipped bars on a baking sheet lined with parchment paper.
    2. You can add toppings such as flaked salt, sprinkles, bee pollen or chia seeds.
    3. Place the bars back in the freezer to solidify the chocolate shell, then enjoy!

    Storage

    These protein ice cream bars are best stored in the freezer. Place them in an airtight bag in the freezer and eat within two months.

    Ingredients

    Ice Cream Filling

    • 1 cup coconut cream
    • ¼ cup dark chocolate chips
    • ¼ cup sunbutter (may sub any nut/seed butter)
    • ¼ cup maple syrup (maple flavored syrup for keto)
    • 1 tsp vanilla extract
    • ¼ cup hemp protein powder (may sub any protein powder)
    • 2 dropperfuls CBD oil (optional)

    Chocolate Coating

    • ½ cup dark chocolate chips
    • 1 Tbsp coconut oil
    • 2 dropperfuls CBD oil (optional)

    Instructions

    1. Melt the coconut cream and dark chocolate in a small saucepan.
    2. Once melted, mix in the sunbutter, maple syrup, vanilla, hemp protein and CBD oil. Whisk until smooth.
    3. Pour the filling into silicone popsicle molds. Add popsicle sticks.
    4. Freeze the filling for at least 2 hours, or until firm.
    5. Melt the dark chocolate and coconut oil. Mix in CBD oil if desired.
