These Cinnamon Apple Muffins are made entirely in a blender, using a few basic, healthy ingredients. In addition, they are Paleo, grain free, gluten free, dairy free and nut free! These muffins are great for an afternoon snack or quick morning breakfast, especially if prepared the night before.
When it comes time for breakfast, I'm always in the mood for something quick and easy. Especially since I have a whole crew of mouths to feed. And, I don't know about anyone else, but my kids wake up ready to eat!

Solution for an Easy Paleo Breakfast
Making muffins in the blender is my new favorite thing! Especially since receiving the Oster Master Series Blender with Texture Select Settings (sponsored), which is available at Walmart. I tend to get really excited about new kitchen gadgets, so it's been fun playing around with recipes using this powerful kitchen blender.
The Oster Master Series Blender with Texture Select Settings has many different, easy to use settings that let me customize the thickness and consistency of whatever I'm making. From thick smoothies to homemade Paleo Oatmeal to grain free muffins, this blender does it all! It also comes with a Blend-N-Go cup; perfect for taking a smoothie or blended iced coffee to-go.
I used the Oster Master Series Blender with Texture Select Settings to make these Cinnamon Apple Muffins. Which, is one of my new favorite muffin recipes using cassava flour. Why? Well, besides their amazing taste, these muffins are:
- quick to make
- healthy
- have little added sugar
- Paleo
- nut free
- kid and toddler approved
These muffins are made with cassava flour, making them grain free, gluten free and nut free. In addition, they are sweetened with just one tablespoon of maple syrup (in addition to the apples). Which, can be eliminated if you don't want any added sugar.
How To Make Cinnamon Apple Muffins in the Blender
To make blender muffins, first gather the necessary ingredients. Then, preheat the oven to 350 degrees F.
Next, prepare the apples by removing their core and chopping into bite-sized pieces. Add the eggs, oil, vanilla, maple syrup and apples to the Oster Master Series Blender with Texture Select Settings.
Plug in the blender and press the "on" button at the top of the base. Then, place the food mode settings on smoothie and the texture to medium. Start the blender. Blend until the mixture is smooth.
Add the remaining ingredients to the blender. Blend on the settings: smoothie and thick. After blending, the batter should have a thick, even consistency.
Pour the batter into a lined muffin pan and top with additional cinnamon (optional). Either use silicone muffin cups, or greased paper cups to prevent sticking. Next, place the muffins in the preheated oven and bake at 350 degrees for 28-30 minutes.
After baking, remove the blender muffins from the oven and cool on a wire cooling rack until they have reached room temperature.
Eat on their own, or top with anything from coconut butter to nut butter, to dairy free icing.
These healthy apple muffins are best kept in the fridge for up to a week. They can be prepared ahead of time for an easy Paleo breakfast or snack.

Description
Healthy cinnamon and apple muffins made in the Oster Master Series Blender with Texture Select Settings. Perfect for a quick, simple and healthy Paleo breakfast.
Ingredients
- 250g green apple (about 2+⅓ cups chopped)
- 3 large eggs
- 2 Tbsp avocado oil
- 1 Tbsp maple syrup
- 1 tsp vanilla extract
- 75g cassava flour (½ cup)
- 1 Tbsp ground cinnamon
- ½ tsp baking soda
- ¼ tsp salt
Instructions
- Preheat oven to 350 degrees F.
- Chop apple into bite-sized pieces, removing the core.
- In the Oster Master Series Blender with Texture Select Settings, add eggs, maple syrup, vanilla, avocado oil and apples* Turn blender on and set to smoothie and medium. Blend until smooth.
- Stop the blender and add the remaining muffin ingredients. Set the blender to smoothie and thick. Blend.
- Pour batter into a lined muffin pan. Optional: sprinkle additional cinnamon on top of muffins. Place the muffins in the preheated oven and bake at 350 degrees for 28-30 minutes.
- Remove muffins from oven and cool to room temperature on a cooling rack.
- Store in fridge up to one week.
Notes
*For easier blending, add liquid ingredients prior to apples.

Hi Nikki! The best substitute would be a gluten free flour blend. I like Bob's Red Mill Paleo Baking Mix. However, I haven't tested any substitutions.
