    Collagen Brownie Bites

    These collagen brownie bites are great for a healthy dessert or protein packed snack. They're rich and chewy, require just 5 ingredients and minimal prep time. This collagen ball recipe is gluten free, dairy free, paleo and can easily be made keto.

    I frequently make my collagen protein balls as a simple, healthy dessert to eat throughout the week and my whole family loves them! So, I knew these collagen brownie bites would be an instant favorite too.

    Like my collagen protein balls, these brownie bites are made with almond butter, collagen peptides and lightly sweetened with maple syrup. In addition to that, I added cocoa powder for a rich chocolate flavor.

    These collagen brownie bites require just 5 ingredients, are no bake and paleo friendly. You can easily make them keto by swapping the maple syrup for your favorite sugar-free liquid sweetener.

    Ingredients

    These bites only require 5 ingredients (the salt is optional). You can find the full recipe in the recipe card below, but here's a list of what you need:

    • almond butter - I recommend a drippy almond butter made with just dry roasted almonds. If your almond butter is salted, omit the salt.
    • maple syrup - you can swap the maple syrup for any other liquid sugar/sweetener.
    • collagen peptides - I used Vital Proteins unflavored collagen peptides, but any brand or flavor will work.
    • cocoa powder - dutched cocoa powder works well for this recipe.
    • vanilla extract - added for flavor.
    • salt (optional) - enhances the flavor, but is not required.

    How to Make Collagen Brownie Bites

    Making these bites is super simple! To start off, gather the required ingredients, a small bowl for mixing them and a spatula.

    Mix together the almond butter, maple syrup and vanilla. Once combined, add in the collagen, cocoa powder and salt. The dough may appear too dry at first, but keep mixing it with the spatula or use your hands to combine it.

    Scoop the dough into tablespoon sized balls and place them on a lined baking sheet. You should get about 14 bites.

    After rolling the balls, you can eat them immediately. Or, pop them in the fridge to set. They will slightly harden in the fridge. You can then place them in an airtight container for storage.

    Storage

    Keep these brownie bites in a sealed container or baggie in the fridge, up to two weeks. For longer storage, keep them in the freezer, up to two months.

    These collagen brownie bites require just 5 ingredients and make for a healthy dessert or protein packed snack.  They're gluten free, dairy free, paleo and easily made keto.


    Ingredients

    Scale
    • ½ cup almond butter
    • 3 Tbsp maple syrup*
    • 1 tsp vanilla extract
    • ⅓ cup collagen peptides (33g)
    • 3 Tbsp cocoa powder (15g)
    • ⅛ tsp salt (optional, omit if almond butter is salted)

    Instructions

    1. Line a small baking sheet with parchment paper and set aside.
    2. In a small bowl, combine the almond butter, maple syrup and vanilla.  Once combined, mix in the collagen, cocoa powder and salt**
    3. Roll the dough into balls, each about one tablespoon in size.  After rolling, place on the lined baking sheet.  You should get about 14 bites.
    4. Enjoy immediately, or place in the fridge to set.
    5. Store in an airtight container or baggie in the fridge, up to two weeks.

    Notes

    *For keto, use a liquid sugar free sweetener, such as Lakanto maple flavored syrup.

    **The dough may appear too dry at first, but just keep mixing it.  Use your hands to knead the dough if necessary.  If it is still too dry, then add more almond butter or maple syrup.

      How do you think these would do for school lunches? Do you think they would stay formed in a lunchbox or do they need to stay refrigerated to keep their form?

        If you store them in the freezer and packed them in the morning, they might be just right by lunchtime!

        I think they will be fine in a lunch box if you have an ice pack. They don't need to be kept chilled, but if it's hot out, they may get mushy.

      These brownie bites are so easy to make and delicious! They're the perfect thing to have for a little sweet treat after dinner. I prepped a bunch for my postpartum stash, too. These will def be on repeat in our house!

      Recipe sub - I used peanut butter instead of almond butter because of a tree nut allergy.

        It was dry and I added 2.5 Tablespoons of melted
        Coconut Oil.
        I saw your comment about adding more almond butter or maple syrup afterwards, will try that next time. It is very tasty and I would make it again. Ty!
