I didn't always love brussels sprouts. In fact, I used to not like them at all.
My family didn't eat a lot of brussels sprouts growing up. And when we did, they were steamed...which is basically the worst way to eat brussels sprouts. (Sorry mom and dad!)
But cooking for myself, I discovered that brussels sprouts taste best when they have been cooked until crisp. So, tossed in a bit of oil, smothered with spices and either baked or air fried. Of course, they taste great with bacon too, but what doesn't!? 😉
Curry Air Fryer Brussels Sprouts
These Curry Air Fryer Brussels Sprouts are one of my favorite ways to eat this cruciferous vegetable. This healthy brussels sprouts recipe is:

This is such a simple, easy recipe and it can be made in less than 30 minutes. Air fryer veggies have become a staple in my diet because of how quick they are to make and the fact that they taste wonderful!
Since this Paleo air fryer brussels sprouts recipe is made in an air fryer, it only makes sense to introduce you to the one I own...which I believe is the best air fryer on the market based off of function and cost.
What Air Fryer is Best?
I have the Cuisinart Convection Toaster Oven Air Fryer. I love my air fryer, especially since it is multi-functional and stainless steel (much healthier than the air fryers with non-stick coatings).
It has many functions including: air fry, convection bake, convection broil, bake, broil, warm, toast. This oven can hold up to 3 lbs of chicken or toast 6 slices of bread at a time. In addition, it comes with an oven rack, baking pan and stainless steel wire air fryer basket.
I've been using it for quite some time and have no complaints!
Ingredients in Curry Air Fryer Brussels Sprouts
Here's what you need to make these crispy Vegan brussels sprouts:
- brussels sprouts
- olive oil (or avocado oil)
- curry powder
- salt
- lemon
- flaked salt (optional)
This easy brussels sprouts recipe uses curry powder from Primal Palate. It is my favorite curry powder seasoning and is made from a blend of organic spices.
How to Make Brussels Sprouts in the Air Fryer
Cooking any vegetable in the air fryer is super easy! Here's how to make these Curry Air Fryer Brussels Sprouts in the Cuisinart air fryer toaster oven.
First, prepare the brussels sprouts by cutting of their ends, removing any wilted leaves and then slicing them in ½ or ⅓ (depending on how large they are).
Place the brussels in a large mixing bowl and coat with oil. Then add the curry powder and salt and mix with tongs until well coated.
Spread the brussels sprouts out on the wire air fryer basket.
Place the basket on the top rack of the air fryer oven. Plug the air fryer in, then set the function to "air fry", the temperature to 350 degrees F and the time to 10 minutes.
Air fry the vegetables for 10 minutes, then take them out and flip the brussels sprouts. Remove any extra crispy leaves from the basket so that they don't burn.
Place the brussels back in the air fryer and cook another 5 minutes.
After air frying, drizzle fresh lemon juice over the cooked brussels sprouts and add a pinch of flaked salt. Serve immediately.

My family enjoys this as a side dish to any meal. Some favorites include: curry chicken tenders (can't have too much curry!), lemon ginger salmon, green apple burgers.
How do you store leftovers?
These brussels sprouts make great leftovers. Simply, store them in a glass, air-tight container in the fridge up to four days.

- Remove brussels from air fryer, flip, and remove any extra crispy leaves.
- Place the brussels back in the air fryer and cook another 5 minutes.
- Remove brussels from the air fryer, drizzle with freshly squeezed lemon and top with flaked sea salt.
- Serve immediately.

I saw this recipe on instagram and decided I needed these for dinner! Bought the brussels sprouts and made it that night. They were delicious! The lemon juice was a neat touch….I added a really nice flavor.
I don’t have an air fryer so I just baked mine in the oven. It takes longer than the recipe but they still turned out great!
