    Oven Roasted Green Beans (Paleo, Vegan)

    These healthy Oven Roasted Green Beans are the best veggie side dish.  They are Paleo, Vegan, Keto, Whole30 approved, only four ingredients and kid friendly.  Yes, my kids LOVE them!  This baked green bean recipe is so easy to make and sure to please even the pickiest eaters.

    I enjoy green beans many ways: baked, sauteed, steamed, grilled...even canned if they're in a soup.

    But these Oven Roasted Green Beans!  Guys, if you want your kids to like green beans, then this is the way to serve them.

    These baked green beans are so good.  Think:

    • crisp and flavorful
    • not rubbery or mushy
    • salty and garlicky

    I could literally eat the whole batch in one sitting.  And I have (sshhh)!

    Ingredients in Oven Roasted Green Beans

    Here's what you need to make these garlicky green beans:

    • fresh green beans
    • avocado oil
    • salt
    • garlic powder

    I find that fresh, crisp green beans work best for this recipe.  If you use ones that are wilted and about to go bad then the end product doesn't turn out quite as crisp.  Plus, green beans taste better fresh anyway.

    I chose to use avocado oil because it is stable at high temperatures and has a pretty neutral flavor.  However, olive oil would be an acceptable replacement.  Or even coconut oil if you like the flavor of coconut!

    Salt and garlic powder are a must for getting that rich, salty and garlicky flavor (obviously)!  But, if you cannot eat garlic due to food intolerances, then it can be left out.  I've linked the two brands that I used in this recipe, but any will work.

    How to Make Roasted Green Beans in the Oven

    The process is simple.  First, preheat your oven to 375 degrees F.

    Then, wash and trim the green beans.  Place them in a large mixing bowl and drizzle the green beans with avocado oil.  Use tongs (or your hands) to mix the green beans and oil until they are well coated.

    Next, sprinkle on the salt and garlic powder.  Again, mix until well coated.

    Grease a baking sheet with a little more avocado oil.  Spread the green beans out on the baking sheet so that none are overlapping.

    Place the green beans on the bottom rack of your oven and bake at 375 degrees for 20 minutes.  Remove them from the oven, flip the green beans and then cook another 10 minutes.

    Cool slightly and eat!  They are best served just after baking.

    Ingredients

    Scale
    • 16 oz fresh green beans
    • ½ Tbsp avocado oil (plus more for greasing pan)
    • ½ tsp salt
    • ¼ tsp garlic powder


    Instructions

    1. Preheat oven to 375 degrees F.
    2. Wash and trim green beans then place in a large mixing bowl.
    3. Drizzle green beans with avocado oil and mix until well coated.
    4. Sprinkle on salt and garlic powder.  Mix until well coated.
    5. Grease a baking sheet with a little avocado oil.  Place the green beans on the pan and spread them out so that none of them are overlapping.
    6. Put green beans on the bottom rack of your oven and bake at 375 degrees for 20 minutes.
    7. Remove green beans from the oven, flip and then bake another 10 minutes.
    8. Best served warm.
