Ingredients
Here's a list of what you'll need to make this paleo teriyaki beef bowl:
- ground beef
- garlic
- fresh ginger
- salt
- teriyaki sauce - any will do, but I used Primal Kitchen's teriyaki sauce which is paleo and whole30 approved.
- cauliflower rice - I used the cauliflower rice recipe from my blog, but you can follow any recipe. If you're not following a strict paleo/whole30 diet, then feel free to use real rice or noodles instead.
- peeled carrots - I used a veggie peeler to peel the carrots, but you could also slice them thinly with a sharp knife or grate them.
- sliced cucumber - we love English cucumbers
- red onion - or any type of onion
- pickled jalapeños - or fresh if you prefer
- cilantro - you may swap for parsley
- chives - or green onions
- sesame seeds - optional garnish
Instructions
- Place ground beef in a large frying pan and cook over medium heat with garlic, ginger and salt.
- Once the ground beef is fully cooked, add in the teriyaki sauce and simmer until most of the moisture has evaporated.
- Assemble the bowls: add beef and cauliflower rice, then top with the remaining bowl ingredients.
Storage
For fully assembled bowls, keep leftovers in an airtight container and enjoy with 3 days.
If you're meal prepping, then keep the ground beef, cauliflower rice and prepared veggies in their own airtight containers. Assemble the bowls just before eating.
