Cauliflower rice has been one of my go-to side dishes for years. But I've failed to put a recipe up on my blog until now...oops!
I've eaten a lot of cauliflower rice and tried many different flavor variations and cooking methods. But this easy cauliflower rice recipe is my personal favorite.
My tip for optimal flavor and texture is to cook the cauliflower in coconut oil on the stove top. (I use my non-toxic ceramic pans.) The addition of onion, garlic powder and salt complete the flavor, making this the BEST whole30 side dish.

- onion
- coconut oil

For the cauliflower, you can either rice your own using a cheese grater or food processor. Or, you can buy pre-riced cauliflower from a grocery store like Trader Joe's or Whole Foods.
The onion is optional, but makes the cauliflower rice taste even better.
How to Make Cauliflower Rice Without a Food Processor
Making cauliflower rice in a food processor is easy, but so is grating it on a cheese grater. Which is what I did.
Simply cut the cauliflower into florets and use a cheese grater to shred the cauliflower. Just be careful not to cut your fingers!
How to Cook Cauliflower Rice on the Stove Top
This recipe for vegan cauliflower rice is cooked on the stove top, in a large frying pan. Any type of frying pan will work, but I recommend a ceramic frying pan.
After you've rice the cauliflower, place a large frying pan on the stove top (small burner) and turn the heat to medium. Melt the coconut oil on the frying pan.
Once melted, add the cauliflower rice and onion to the frying pan. Cook on medium heat for 15-20 minutes or until the rice starts to brown. Be sure to stir the rice with a spatula or wooden spoon every couple minutes.
When the cauliflower rice is done cooking, remove the pan from the stove top and sprinkle on the garlic powder and salt. Stir the mixture.
Cauliflower rice is best served hot.
Pair it with your favorite main course like sesame chicken and a side of sautéed vegetables.
Storage
Keep any leftovers in an air-tight container in the fridge. For best flavor and texture, consume within 2-3 days.
