Furthermore, these pancakes are made with cassava flour, CBD sparkling water, dried cherries and sweetened with coconut sugar. The best solution for a healthy, satisfying Paleo breakfast.
It shouldn't come as any surprise that I enjoy experimenting with unique flavors and alternative baking ingredients. Well, these pancakes are the newest addition to my library of fun, uniquely flavored recipes.
These Black Cherry Pancakes aren't your average pancake. Instead, they contain a special ingredient...CBD sparkling water!
Yes, you read that right. Black Cherry CBD sparkling water from Weller (sponsored).
Weller CBD Sparkling Water
Weller has a selection of CBD products including sparkling waters, coconut bites and a powdered CBD mix. I'm a huge fan of their sparkling waters, which come in three flavors: black cherry, tangerine and watermelon.

Okay, so now you know the "secret" ingredient in these pancakes. But, why use sparkling water at all in a recipe?
Benefits of Baking with Sparkling Water
To put things simply, sparkling water adds fluff and flavor to these pancakes. Yes, these pancakes can be made without sparkling water. But, this bubbly solution is what really gives these pancakes an airy texture and cherry taste.
Ingredients in Chocolate Cherry Pancakes
These pancakes are made with a short list of Paleo friendly ingredients. Here's what you need:
- cassava flour
- cocoa powder
- coconut sugar
- baking powder
- salt
- Black Cherry CBD Sparkling Water
- eggs
- vanilla
- dried cherries (optional)
A few notes on the ingredients... this recipe has only been tested using cassava flour. However, any gluten free flour blend (or wheat flour if you don't follow a Paleo diet) should work in its place. Just be sure to measure by weight.
The coconut sugar can be substituted with any granulated sugar or sweetener.
Weller's CBD sparkling water is recommended for this recipe. However, any liquid will work.
This recipe has not been tested with egg alternatives.
How to Make Black Cherry Pancakes
These pancakes are perfect for a quick, festive holiday breakfast because they are easy to make.
First, combine all dry ingredients (except the cherries) in a medium-sized mixing bowl. This includes: cassava flour, cocoa powder, coconut sugar, baking powder and salt.
Next, add in the wet ingredients. This includes the sparkling water, eggs and vanilla.
Then, chop the cherries into small pieces. Fold them into the batter.
Set your frying pan on the stove top and turn the burner to medium-low heat. Add a little butter or oil to grease the pan (I used coconut oil). Once the pan is hot, add about ¼ cup of batter. Cover and cook on medium-low heat until bubbles form on top of the pancake. Remove the lid, flip the pancake and cook about 30 seconds more, or until done.
Repeat this process until no more batter remains. This recipe makes about 10 pancakes.
Lastly, top your pancakes with maple syrup, pomegranate seeds and pumpkin seeds for a festive holiday stack. Or, use any of your favorite pancake toppings.

Ingredients
- ½ cup cassava flour, packed (80g)
- ¼ cup cocoa powder (25g)
- 2-3 Tbsp coconut sugar
- 1 tsp baking powder
- ¼ tsp salt
- ¾ cup Weller Cherry CBD Sparkling Water
- 2 large eggs
- 1 tsp vanilla extract
- ¼ cup dried cherries (optional)
Instructions
- Combine cassava flour, cocoa powder, coconut sugar, baking powder and salt in a medium sized mixing bowl.
- Mix in sparkling water, eggs and vanilla.
- Chop dried cherries into small pieces and fold into the pancakes batter.
- Preheat frying pan on medium-low heat. Grease pan with a small amount of oil.
- Add ¼ cup pancake batter to preheated frying pan. Cover and cook on medium-low heat until bubbles form. Flip pancake and cook 30 seconds more, or until done.
- Repeat step 5 until all batter is used up.
