These fluffy Chocolate Protein Waffles are great for an easy, homemade breakfast. They're made with collagen for an extra dose of protein. In addition, these waffles are gluten free, dairy free and Paleo.
I purchased a new miniature waffle maker recently and my love for making waffles has returned. My old one got so much use that it wasn't working as well as I liked. Plus, it had a broken leg and didn't stand straight.
But now that I have a new one, I'm excited to share more waffle recipes, starting with these Chocolate Protein Waffles.
Healthy Protein Waffle Recipe
These waffles are made with Ancient Nutrition's Chocolate Multi Collagen Protein. They are light and fluffy, sweetened with coconut sugar (or monk fruit) and great for a simple morning meal.
In addition, these waffles are:

- grain free
- dairy free
- Paleo
- easy to make
How to Make Gluten Free Chocolate Protein Waffles
To make these waffles, you'll need the following ingredients:
- collagen
- blanched almond flour
- cocoa powder
- tapioca flour (or arrowroot)
- coconut sugar (or any granulated sugar/sweetener)
- baking powder
- salt
- eggs
- water
First, combine all dry ingredients in a medium-sized mixing bowl. Then, mix in the eggs and water. Pour approximately 2 tablespoons of batter onto a preheated miniature waffle iron and cook until done.
It's that easy!
Healthy Waffle Toppings
There are an endless amount of healthy, Paleo waffle toppings. For these photos, I paired these waffles with non-dairy yogurt, slivered almonds, pomegranate seeds, dark chocolate chunks and bee pollen.

Ingredients
- ¼ cup blanched almond flour (30g)
- ¼ cup cocoa powder (27g)
- 2 Tbsp tapioca flour (16g)
- 1 level scoop chocolate collagen (11g)
- 2 Tbsp coconut sugar (or sweetener)
- 1 tsp baking powder
- ¼ tsp salt
- 2 large eggs
- ¼ cup water
Instructions
- Preheat mini waffle iron.
- In a medium-sized mixing bowl, combine all dry ingredients.
- Add in wet ingredients, mix well.
- Pour about 2 tablespoons batter onto mini waffle iron and cook until done.
