Although I love baking with pea protein, hemp protein powder has quickly become a favorite of mine!
It bakes well, has a mild flavor, is an excellent source of complete protein (20 amino acids) and is a good source of fiber and minerals. Plus, hemp plants are pretty easy to grow. Meaning, they don't need any chemical pesticides or fertilizers and use very little water. Which makes hemp protein powder a sustainable option!
These gluten free hemp protein cookies are absolutely amazing! They have a chewy texture and are studded with dark chocolate chips. This low carb protein cookie recipe is paleo, gluten free, grain free and dairy free. There's really no reason not to love them!

Ingredients
Here's what you need to make these hemp protein cookies:
- hemp protein powder
- almond flour - swap with tigernut flour for a nut free version
- granulated sugar - I used coconut sugar, but monk fruit sweetener is great for a lower carb option
- cinnamon - optional ingredient added for flavor and a little extra nutrition
- baking soda
- salt
- palm shortening - to keep these cookies dairy free and paleo friendly, I used palm shortening, however butter works too!
- egg - no egg substitutes have been tested
- vanilla extract
- dark chocolate - I used 85% dark chocolate chips, but any type will work
Ingredient Tips and Swaps
- Protein Powder: this is a hemp protein cookie recipe, therefore no other protein powders have been tested. If you try another protein powder in this recipe, then let me know the results in the comments.
- Sugar: for the granulated sugar, I have tested this recipe with both Monk fruit sweetener and coconut sugar. Both turned out great! You may use anywhere from ¼ cup to ⅓ cup sugar, depending on your taste preference.
- Shortening/Butter: my go-to butter replacement is palm shortening. I always look for a non-hydrogenated shortening made from organic and sustainably sourced palm oil. Shortening bakes similarly to butter and has a very low key flavor. I highly recommend it if you're dairy free. That being said, I have tested these cookies with real butter and they turn out just as great.
- Chocolate: I used extra dark miniature chocolate chips from Pascha Chocolate. However, any type of chocolate chips will work instead.
How to Make Hemp Protein Cookies
These low carb protein cookies are easy to make and have the most delicious, chewy texture.
- First, preheat your oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
- In a large mixing bowl, combine the wet ingredients, then mix in the dry. Once well combined, fold in the chocolate chips.
- Using a large cookie scoop, scoop the dough onto your lined baking sheet. Bake in your preheated oven for 10 minutes.
- After baking, remove the cookies from the oven and cool them to room temperature on the baking sheet. The cookies need to cool or else they will be too soft to handle and fall apart.
Storage
These hemp protein cookies are best stored in the fridge or freezer in an air-tight container or baggie. They are best eaten within one week if stored in the fridge or one month in the freezer.

Ingredients
- 1 large egg
- ¼ cup palm shortening, room temp (48g)*
- ¼ cup coconut sugar**
- 1 tsp vanilla extract
- 1 cup blanched almond flour (95g)
- ⅓ cup hemp protein powder (25g)***
- 1 tsp cinnamon
- ½ tsp baking soda
- ¼ tsp salt
- ⅓ cup miniature dark chocolate chips
Instructions

Preheat oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.

In a large mixing bowl, combine egg, shortening, sugar and vanilla. Whisk with a fork, then add in almond flour, hemp protein, cinnamon, baking soda and salt. Mix until well combined.

Fold in the chocolate chips.

Scoop the cookie dough onto your lined baking sheet. I used a large cookie scoop, making each cookie about 2 tablespoons of dough. The cookies do spread, so be sure to leave 1-2 inches between each cookie.

Place the cookies in the oven and bake at 350 degrees F for 10 minutes.

Remove cookies from oven and cool to room temperature on the baking sheet.

Store cookies in an airtight container or baggie. Keep in the fridge for up to one week, or the freezer up to one month.
