    Orange Cream Popsicles (Paleo)

    These orange cream popsicles are smooth and creamy with a sweet orange flavor. They're made with fresh orange juice, coconut cream and sweetened with raw honey. This popsicle recipe is paleo, dairy free and refined sugar free.

    Who needs to buy popsicles when you can easily make your own at home?!

    Seriously, I never buy popsicles or ice cream bars anymore, unless we need to transport and share treats for an event like soccer. It's so easy to make my own at home and they honestly taste better than store bought.

    These orange cream popsicles are my newest obsession! They have a creamy texture and sweet orange flavor. These bars are made with coconut cream, fresh squeezed orange juice and sweetened with honey. My kids and I have been enjoying them all summer long to cool down in the heat.

    Ingredients

    You only need 8 ingredients to make these healthy orange cream bars. The full recipe can be found in the recipe card below, but here's an overview of what you'll need:

    • orange juice - I used fresh squeezed orange juice, but store bought would work too.
    • orange zest - this makes the orange flavor stand out more and is highly recommended, but not required
    • coconut cream - since these orange cream bars are dairy free, I used coconut cream to give them a creamy texture and that Creamsicle-like flavor. You will only need the thick white cream in a can of full fat coconut milk/cream.
    • honey - raw honey is best for these bars, but you could use maple syrup instead.
    • vanilla extract - added for flavor
    • collagen peptides - these not only boost the protein content, but also add to the creamy texture.
    • tapioca starch - this is required for helping the ingredients blend together. Without tapioca starch, the coconut cream separates when blending. The best swap is arrowroot starch.
    • salt - brings out the flavors

    How to Make Orange Cream Popsicles

    You'll need a blender and popsicle molds to make these orange cream bars. I used my silicone popsicles molds, which make miniature popsicles, but any popsicle mold will work. Here are the steps:

    1. Grab your popsicle molds and place them on a baking sheet. Insert a popsicle stick into each mold.
    1. Place all ingredients in a blender and blend, starting at a low speed and increasing the speed until everything is well mixed.
    1. Pour the mixture into your popsicle molds, filling each slot to the top.
    1. Place the bars in your freezer and freeze overnight, or for at least 4 hours.

    1. Remove the bars from the popsicle mold and enjoy!

    Tips and Tricks

    • Popsicle Molds: if using the same popsicle molds as me, then place the sticks in the mold before adding the liquid. The mixture is runny, so may leak through the popsicle stick holes if you don't add them first.
    • Add tapioca starch: don't skip this ingredient! When blending, the mixture may separate, but the tapioca starch brings it all back together. If you've already added the starch and the juice separates, don't fret. Just keep blending until the mixture comes back together.
    • Freeze on a level surface: have a flat, level surface ready in your freezer where you can place the popsicles.

    Storage

    These paleo popsicles are best kept in an airtight baggie in the freezer, up to 3 months. They will melt at room temperature.

    FAQ

    Do I have to add tapioca starch?

    Yes, the purpose of the tapioca starch is to keep the ingredients from separating. You can swap tapioca starch with arrowroot starch.

    Is the collagen necessary?

    No, you can leave out the collagen peptides or replace them with an unflavored or vanilla protein powder. I added the collagen to improve the popsicles texture and increase the protein content.

    Ingredients

    Scale
    • 1 cup fresh squeezed orange juice (2-3 oranges)
    • 1 cup coconut cream (just the thick white cream from a can of full fat coconut milk/cream)
    • ½ Tbsp orange zest
    • 3 Tbsp raw honey
    • 2 tsp vanilla extract
    • ¼ cup collagen peptides
    • 2 Tbsp tapioca starch
    • ¼ tsp salt


    Instructions

    1. Grab your popsicle molds and place them on a baking sheet.  Insert a popsicle stick into each mold (you should get 15 bars).
    2. Place all ingredients in a blender and blend, starting at a low speed and increasing the speed until everything is well mixed.  If the mixture separates, keep blending until it comes back together.
    3. Pour the mixture into your popsicle molds, filling each slot to the top.
    4. Place the bars in your freezer and freeze overnight, or for at least 4 hours.
    5. Remove the bars from the popsicle mold and enjoy!
    6. Store in an airtight baggie in the freezer.
