    Hemp Seed Bars (Paleo, Vegan)

    These homemade hemp seed bars are the ultimate no bake dessert. They consist of a chewy date and nut crust and a rich, fudgy chocolate topping. This hemp bar recipe is paleo, vegan, gluten free, dairy free and refined sugar free.

    I'm really not much of a meal-prepper. However, when it comes to prepping healthy desserts and snacks I'm all for it!

    These hemp seed bars have made a frequent appearance in my kitchen. They have a chewy crust made with dates, almonds, coconut and hemp seeds, that's topped with a creamy fudge topping.

    I love them because they're super easy to make and you can easily mix and match the ingredients. For instance, swap pecans for almonds or use homemade sunflower seed butter in place of the almond butter.

    Ingredients

    For the Crust

    • raw almonds
    • unsweetened shredded coconut
    • hemp hearts/seeds
    • Medjool dates
    • salt

    For the Topping

    • coconut oil
    • unsweetened almond butter

    As mentioned earlier, these hemp heart bars are easy to customize. Don't have almonds on hand? Swap the almonds for pecans or walnuts. Need to make these bars nut free? Substitute the almonds for sunflower seeds and the almond butter for sunflower seed butter.

    For this recipe, I used Evo hemp chocolate. It's not only paleo and vegan, but keto friendly as well. I love that it isn't overly sweet, but still made with wholesome ingredients.     How to Make Hemp Seed Bars

    These hemp granola bars are super easy to make and best of all they don't require any baking!

    1. First, line an 8" x 4" loaf pan with foil or parchment paper.
    Making the crust in a food processor.
    1. Make the Crust: Combine all crust ingredients in a food processor or high powered blender. Blend until the mixture starts to clump and can be pressed to hold together.

    1. Press into loaf pan: Firmly press the crust into a lined 8"x4" loaf pan.
    Making the fudge topping.
    1. Make the Topping: Melt the chocolate and coconut oil in a small sauce pan, over low heat. Once melted, remove from heat and mix in the almond butter and CBD oil.
    Assembled hemp seed bars ready to chill in the fridge.
    1. Add topping: Pour the topping over the crust and place in the fridge to set.
    1. Once topping has set, cut to desired size and eat!

    Storage

    These bars are best kept in the fridge or freezer. Place the hemp seed bars in an air-tight container or baggie. They will keep well in the fridge for up to two weeks, or the freezer up to two months.

    Do these bars have to be made in a food processor?

    Yes, the crust needs to be made in a food processor.

    Can these bars be made nut free?

    Yes, you can make these bars nut free by swapping the almonds in the crust for a seed like sunflower seeds or pumpkin seeds. For the topping, swap the almond butter for sunflower seed butter or tahini.

    Ingredients

    Crust

    • ½ cup almonds
    • ½ cup shredded coconut
    • ¼ cup hemp hearts/seeds
    • 5 Medjool Dates
    • ⅛ tsp salt

    Topping

    • ½ cup hemp chocolate
    • 1 tsp coconut oil
    • ¼ cup almond butter
    • 2-3 dropper-fulls CBD oil


    Instructions

    1. Line an 8" x 8" loaf pan with foil or parchment paper and set aside.
    2. Make the Crust: combine all crust ingredients in a food processor. Blend until the mixture starts to clump.
    3. Firmly press the crust into your lined pan.
    4. Make the topping: melt the chocolate and coconut oil in a small sauce pan, over low heat. Once melted, remove from heat and mix in the almond butter and CBD oil.
    5. Pour the topping over the crust.
    6. Chill: place the bars in the fridge for at least an hour to firm.
    7. Cut and Serve: Remove bars from the pan and cut to desired size.
    8. Storage: store in an airtight container or baggie in the fridge for up to two weeks, or the freezer up to two months.
