    Frozen Chocolate Covered Raspberries

    These frozen chocolate covered raspberries are a refreshing dessert with a fruity raspberry flavor and rich chocolate coating. They're made with fresh raspberries, yogurt and dark chocolate.

    Does it come as a shock that I've never tried the Tru Fru dark chocolate covered raspberries?

    I've heard of them, I'm sure they're great, but I'd rather make my own. It also bothers me that their "dark" chocolate version isn't actually make with dark chocolate, but instead with semisweet and white chocolate...but I digress.

    These chocolate covered raspberries are my take on the Tru Fru chocolate covered raspberries. Rather than white chocolate, the raspberries are dipped in a protein-yogurt mixture, frozen and then dipped in real dark chocolate.

    They're perfect for a healthy dessert and my whole family loved them!

    Ingredients

    The full recipe for these frozen chocolate covered raspberries can be found in the recipe card below, but here's an overview of what you'll need:

    • fresh raspberries - fresh raspberries are best since frozen raspberries often come in pieces. However, you can use frozen if that's all you have.
    • yogurt - I used a dairy free coconut yogurt, but any type of yogurt will work. I've also tried them dipped in coconut butter instead of yogurt and that was just as tasty!
    • protein powder - protein powder is optional, but I love the extra flavor it provides. I used a vanilla beef protein isolate.
    • dark chocolate chips - I recommend anything from 70-85% dark chocolate for this recipe.
    • coconut oil - to thin the chocolate, making the raspberries easier to dip.

    How to Make Frozen Chocolate Covered Raspberries

    These frozen chocolate raspberries are easy to make and require only a few steps. Here's what you need to do:

    1. Rinse and dry your raspberries.
    2. Line a small baking sheet with parchment paper.

    1. Combine the yogurt and protein powder in a small bowl. Dip the raspberries into the mixture and set on your lined baking sheet.

    1. Place the dipped raspberries in your freezer and freeze for at least one hour.

    1. Melt the dark chocolate and coconut oil. Dip the frozen raspberries into the chocolate.

    1. Place back in the freezer for a few minutes to set.

    Tips and Tricks

    • Freeze the raspberries ahead of time: rinse and dry your raspberries, then place them on a lined baking sheet and freeze. This is optional, but will make dipping them in the yogurt mixture easier.
    • Swap the yogurt for coconut butter: if you don't like yogurt, feel free to swap the yogurt for coconut butter.
    • Use a thick yogurt: for a thicker coating, you can use a thick, full fat yogurt

    Storage

    These frozen chocolate covered raspberries need to be stored in the freezer. Place them in an airtight baggie and keep in the freezer for up to one month.

    FAQ

    Do I have to use fresh raspberries?

    No, you can use frozen raspberries, however they often get crushed in their packaging. You can also use fresh raspberries and freeze them prior to dipping them into the yogurt mixture. (This makes the coating stick a little better.)

    Is there a swap for the yogurt?

    Yes, you can use coconut butter or white chocolate in place of the yogurt. If doing this, I don't recommend adding the protein powder.

    Description

    Fresh raspberries dipped in a protein yogurt mixture and topped with dark chocolate. The perfect treat to keep stashed in your freezer!


    Ingredients

    Scale
    • 6 oz fresh raspberries (about 30)
    • ⅓ cup unsweetened yogurt (I used coconut yogurt)
    • 2 Tbsp vanilla protein powder
    • ½ cup dark chocolate chips
    • 1 tsp coconut oil


    Instructions

    1. Rinse and dry your raspberries.
    2. Line a small baking sheet with parchment paper.
    3. Combine the yogurt and protein powder in a small bowl.  Dip the raspberries, one at a time, into the mixture. Set the raspberries on your lined baking sheet.
    4. Place the dipped raspberries in your freezer and freeze for at least one hour.
    5. Melt the dark chocolate and coconut oil. 
    6. Dip the frozen raspberries into the chocolate and place back on the lined baking sheet.
    7. Once they're all dipped, place the raspberries back in the freezer for a few minutes to help the chocolate set.
    8. Store in an airtight baggie in the freezer, up to one month.

    Notes

    If you have leftover yogurt, then feel free to double dip your raspberries.  Freeze them, then dip them again in the yogurt mixture.  You can also swap the yogurt for coconut butter or white chocolate and omit the protein powder.
